Vegetarian Chow Mein (Stir-fried Noodles)

With Vesak Day just round the corner, we're excited to drop our latest recipe just in time for the occasion! Treat yourself with a plate of vegetarian Chow Mein on this special day with just a few simple steps.
Ingredients (for 2 servings)
220g of LG Tai Lok Mee or LG Yellow Noodles
110g of dried shiitake mushrooms* (sliced)
80g of cabbage (chopped)
3 cloves of garlic (finely minced)
3 tablespoons of cooking oil
2 tablespoons of soy sauce
1/2 tablespoon of dark soy sauce
1 tablespoon of sugar
50ml of water
a few dashes of white pepper (depending on your preference, we recommend 3)
a dash of salt to taste
1/2 tablespoon scallion oil (optional)
Your favourite vegetables (optional)
*Rehydrate the dried shiitake mushrooms by soaking them in warm water for approximately 20 to 30 minutes until they are soft and plump before slicing.
Heat the pan or wok over high heat with cooking oil. Then add the minced garlic and stir frequently, until aromatic.
Add the mushrooms, cabbage and other vegetables (optional) and stir-fry for a minute.
Add the LG Tai Lok Mee followed by the soy sauce, dark soy sauce, sugar, water, white pepper and salt and stir-fry for 5 minutes.
Once the desired doneness, remove from the pan or wok and mix well with scallion oil (optional).
