Classic Italian Carbonara

Serves Serves 2


  • 200g LG Fresh Spaghetti or LG Fresh Fettuccine

  • 25g Guanciale (the cheek of the pork) or pancetta (Italian bacon) cut into small cubes

  • 2 tbsp olive oil

  • 2 eggs

  • 50g Pecorino freshly grated.

  • Freshly ground black pepper


  1. Cook the pasta in a large pan of boiling salted water until al dente. heat the oil in a pan and fry the guanciale or pancetta until crisp

  2. Lightly beat the eggs in a large bowl with the grated cheese and pepper

  3. When the pasta is ready, drain and add to the pan with the guanciale

  4. Mix well to coat everything

  5. Take off the heat

  6. Allow to cool slightly

  7. Add the egg and cheese mixture

  8. Stir to coat the pasta and serve immediately
