Ipoh Shredded Chicken Hor Fun


Have you been to Ipoh, Malaysia? If you have, you definitely have tried Ipoh Shredded Chicken Hor Fun before. In other words for the locals, they call it the Ipoh Kai See Hor Fun. It is a healthy and comfort dish where you can enjoy at any time of the day. Super easy to cook so let's hop right in!





Ingredients (for 2 servings)


  • 210 g LG Ipoh Hor Fun

  • 250 ml chicken stock

  • 150 ml water

  • 6 prawns (separate the prawn meat and prawn shells)

  • 1 chicken tight

  • 2 tablespoon of oil

  • 2 teaspoon of sugar (optional)

  • 1 tablespoon of crispy shallots

  • a bunch chives


Instructions


1. Bring a pot of water to a boil and add the chicken stock and chicken tight to cook for 5 minutes. In the meantime, heat a pan or a wok on high heat with oil. Start by frying the prawn heads and shells until it turns golden brown. Then, combine both and bring it to a boil. Let it simmer for 20 minutes.




2. Prepare the noodles and toppings. Bring another pot of water to a boil over high heat and when it is boiling, place a serving of LG Ipoh Hor Fun in and blanch it for 30 seconds. Once the soup is ready, put in the prawn meat and cook.


3. Place noodles into a serving bowl. Top with the shredded chicken meat, prawns, and chopped chives. Pour the soup in and garnish it with crispy shallots.
